COOKING WITH CHEF RACHELLE
Oven Roasted Citric Chicken
Our oven roasted citrus chicken wings are a staple dish in my home. The taste citrus, garlic and a dab of honey will leave mouth watering for more.
Crispness Is Key
The key to perfect oven roasted chicken is putting the wings on a wire rack inside of a rimmed baking sheet. The rack allows air to circulate underneath the wings and allows for even cooking.
Feed The Masses
This recipe feeds about 6-10 people. However, there’s never any harm in doubling the recipe—people will always want more of these flavor filled citrus wings. See the chart below for how much you should buy!
1lb whole chicken wings, rinsed and dried
3 Tablespoons Olive Oil
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
1/4 teaspoon chipotle powder
1/4 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon coarse black pepper
1 garlic clove
Juice of one lime
Juice of one lemon
4 Tablespoon Orange Juice
1 Tablespoon finely chopped cilantro
Lime wedges for garnish
• Preheat oven 425
Cut tips off of chicken wings. Cut wings into two sections. The flats and the drums.
Place chicken pieces in a bowl.
Drizzle with olive oil. Add garlic powder, cumin, onion powder, chipotle powder, chili powder, salt, and pepper.
Add Juice of one lime and 4 Tablespoons of Orange juice.
Add 1 Tablespoon finely chopped Cilantro and fresh garlic
Mix well with wooden spoon.
Cover and chill for 4 hours to allow flavors to marinate into meat.
Place wings on oven racks and allow them to cook for 45-60 mins until chicken has become golden brown.
Remove from heat and allow to “rest” for 10 minutes. Serve with lime wedges. Squeeze lime over wings before eating.
